Why don’t you use some sort of cushioning pad (such as carpet underpadding, which I use when sanding) underneath the good side of the piece to protect the show face when you are trimming & undercutting the back? That would also protect your hands & it would keep the piece from sliding as much when you are working on it.

I could use a cushioning pad.
