I’ve noticed that the more advanced projects like these venetian pieces, the less you are mentioning the depth of cut measurements. I am doing a lot of guess work and even watching several videos ahead of the section I am working on to figure out the proper dimensions (depths).
I have even gone to my local library to study venetian interiors to view the delicacy of the wall ornaments. I’m afraid to cut too much off the carving in case you change your mind in the middle of the project like the Acanthus over molding. Which I have to completely start over from scratch.
What I am trying to say is to mention periodically the dimensions of the depths of cut or the thickness measurements from the pointing device.

Always looking forward to more enjoyable projects.
